Pea and Parsley Dip
Entertaining is made easy with this simple and fresh pea and mint dip, the perfect accompaniment to crunchy crudité as an appetiser or BBQ side dish.

Ingredients
- 350g of fresh de-podded peas (you can use frozen if you prefer, thaw before use)
- 25g bunch of flat leaf parsley
- 2 cloves of garlic, crushed
- 1 halved red chilli, de-seeded and roughly chopped (optional)
- 50ml lukewarm water
- 100g of tahini paste
- 2 tbsp of olive oil
- Half a lemon, juice only
- Salt and pepper
- Your favourite crudité to dip
- You will also need a food processer or hand blender
Instructions
- If your peas are still in their pods then remove them and add to the bowl of your food processor along with the garlic cloves, chilli, parsley, tahini, the water, lemon juice and olive oil.
- Whiz in your food processor or blender until you have a vibrant, smooth mixture. If you prefer it a little thinner then gradually add in more water, one tbsp at a time and blend.
- Serve chilled with a selection of crudité such as carrots, peppers, baby corn, cucumber and cauliflower.
